Fruitcake
Ingredients:
- 2 cups mixed dried fruit
- 1 cup walnuts, chopped
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup butter
- 1 cup brown sugar
- 3 eggs
- 1/2 cup dark rum
Steps:
- Preheat oven to 325°F (160°C). Grease and line a baking pan.
- Mix the flour, baking powder, and walnuts together in a bowl.
- Cream butter and sugar in a separate bowl, then add eggs and rum.
- Combine wet and dry ingredients, then fold in dried fruit.
- Pour into the pan and bake for 1.5 hours. Let cool before serving.
Sugar Cookies
Ingredients:
- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1 1/2 cups butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup granulated sugar (for rolling)
Steps:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix flour and baking soda in a bowl.
- In a separate bowl, cream butter and sugar. Add egg and vanilla, and beat until fluffy.
- Gradually mix in the dry ingredients until dough forms.
- Roll dough into balls, roll in sugar, and place on baking sheets.
- Bake for 10-12 minutes until edges are golden. Let cool before serving.
Chocolate Truffles
Ingredients:
- 8 oz dark chocolate, chopped
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- Cocoa powder (for rolling)
- Chopped nuts (optional)
Steps:
- Heat heavy cream in a saucepan until it just starts to simmer.
- Pour hot cream over the chopped chocolate and stir until smooth.
- Mix in vanilla extract and let cool to room temperature. Chill in the fridge for 2 hours.
- Once firm, scoop and roll into balls. Roll in cocoa powder or chopped nuts.
- Chill again for 30 minutes before serving.
Gingerbread

- 3/4 cup butter, softened
- 1/2 cup brown sugar
- 1 egg
- 1/2 cup molasses
Steps:
- Preheat oven to 350°F (175°C). Grease baking sheets.
- Whisk together flour, baking soda, and spices in a bowl.
- In a separate bowl, beat together butter and brown sugar. Add egg and molasses.
- Gradually add dry ingredients to wet ingredients, mixing until dough forms.
- Roll out dough, cut into shapes, and place on baking sheets.
- Bake for 10-12 minutes. Let cool before serving or decorating.
